Shrimp and Chocolate Chip Cookies

...Tonight's dinner was of course themed! Tuesdays are usually Taco Tuesday in our house :) So tonight's dinner was inspired by "Taco Tuesday!"


On tonight's menu: Cayenne Shrimp Tacos:


Ingredients:


-2 Teaspoons of Chili Powder


-1 teaspoon Brown Sugar


-1 teaspoon cayenne pepper


-1/2 teaspoon ground cumin


-1/2 pound peeled and deveined large shrimp (about 24) I use the frozen shrimp from Costco :)


-1 teaspoon olive oil 


-1 Avocado chopped 


-Cabbage


-1/2 tomato chopped


-Corn Tortillas ( I use the tortillas from Costco, they are mini corn tortillas!) 




Prepearation: 


Combine first 4 ingredients in bowl, add shrimp and coat evenly with mixture. 


Heat olive oil in large non-stick skillet over medium-high heat. When oil is warmed add shrimp mixture to skillet; cook 2-3 minutes on both sides or until done (or browned).

Heat tortillas on stove until warmed. Place tortillas on plate and arrange shrimp on tortilla. Top shrimp with chopped avocado, tomato and cabage. ( I also added tapatio!!!) 
ENJOY!!!

After dinner we enjoyed yummy cookies ;) I deserved it after a long exhausting day! ;) 

Now time for bed! I didn't get much sleep last night, now I'm exhausted! Off to bed I go! Good night all :) xoxo
