What a day.....


Today was super busy and insanely full  with a million things to do! But I am happy to say I accomplished everything on my to-do list! Woot-Woot go ME :)

After my spinning class, it was off to hot power hour. Today is Day 2 of my challenge! I'm feeling really good and loving this challenge. My body needed this, running was no longer a challenge for me. I think I realized this last week when I ran 10 miles and barely broke a sweat and had been running at a 8:00 pace! Yeah, time to change things up! 




I had been doing yoga at least 3xs a week but there is something different about being challenged to do it for 30 days that I just love! Anyone else feel the same?!?! 


Today's yoga class was awesome! I finally mastered attempted crow pose and held it for 3 seconds! yup a whole 3 seconds. I was pretty proud of myself ;)  We also did a lot of hip stretching my hips we're happy :) Even with doing yoga for 3 days a week, I never felt as determined as I do now. I feel so focused and determined in class. I love it! 


After my sweaty yoga session I got home and was ready to do damage to my list of things to do! First on my list was......Food (important things first people!)!! Lunch was another turkey sandwich on whole wheat with multi-grain pringles (yum!). 


Then it was on to some baking. We have our senior presentations tomorrow, we're presenting to the nursing faculty, so what better way to celebrate than with baked goodies :)

Baking List
-Cupcakes (some what healthy!) ;) 
-Oatmeal Cookies (healthy)


First Up: Cupcakes


Now, we all know cupcakes are not the healthiest but I always do my best to make things a little more healthy :) So instead of using 3 whole eggs that the box called for, I used 4 egg whites. May not make a huge difference, but it cuts down the cholesterol.

Snack Break

-Yogurt with blackberries and granola


Next: Healthy Oatmeal Cookies
I absolutely love these cookies! They are pretty healthy too, which is why I love them so much! even fiance eats them, and eats nothing with the word "healthy" next to it ;) 

Ingredients:
-1 cup of whole wheat flour 
-1 teaspoon baking powder
-1/3 cup olive oil
-2/3 cup dark brown sugar 
-2 egg whites
-1 teaspoon vanilla extract
-Cinnamon ( I use a lot)
-1/2 cup rolled oat
-1/2 cup chocolate chips :) 


Directions:

1. Preheat oven to 350 degrees. In a medium bowl, whisk together flours and baking powder; set aside.
2. In a large bowl, whisk together oil, sugar, egg, and vanilla. Add flour mixture, and stir to combine; mix in oats and chocolate chips.
3. Using two tablespoons of dough per cookie, roll into balls; place on two baking sheets lined with parchment paper, 1 1/2 inches apart. Bake until lightly browned, 15 to 17 minutes, rotating sheets halfway through.
4. Cool 5 minutes on sheets, then transfer cookies to a wire rack to cool completely.


I also managed to keep my kitchen clean throughout my baking ordeal. Yeah I'm that OCD


Busy busy day! Now time to get to bed. Busy day tomorrow! :)

  1. When baking from the box what you can also do is not use oil, in reality you really don't need it and you can use milk not water if you'd like. I plan to bake this weekend so check out my blog and then you can try to make your own buttercream frosting (not very healthy I know)

    Reading how you are doing yoga every day is only making me miss it so much more!!! I need to get on it! I plan to do that today!

    I approve of your fiancee and I am SO happy that he is so supportive of your racings. LOVE the post spin class and your workout clothes are adorable. You are the yoga queen. p.s. I LOVE your blog:)
